We turn to Deborah Raab \u201976, a certified tea specialist and founder of Tea-For-All located in the Trenton Farmers Market, to spill some facts about her favorite drink.<\/span><\/p>\n<p>1. <span style=\"font-weight: 400;\">Tea is the second-most consumed beverage in the world, right behind water.<\/span><\/p>\n<p>2. <span style=\"font-weight: 400;\">Everyone loves a tea party. Japanese <\/span><span style=\"font-weight: 400;\">ceremonies promote purity, respect, and <\/span><span style=\"font-weight: 400;\">tranquility. In South America, it is a sign of <\/span><span style=\"font-weight: 400;\">hospitality to pass around a gourd filled with <\/span><span style=\"font-weight: 400;\">yerba mate tea and sip it through a metal <\/span><span style=\"font-weight: 400;\">straw.<\/span><\/p>\n<p>3. <span style=\"font-weight: 400;\">Tea grows all over the world, but most is <\/span><span style=\"font-weight: 400;\">grown just above and just below the equator.<\/span><\/p>\n<p>4. <span style=\"font-weight: 400;\">All tea comes from the same plant: Camellia <\/span><span style=\"font-weight: 400;\">sinensis. The processing of the plant deter<\/span><span style=\"font-weight: 400;\">mines the color of the tea \u2014 black, green,<\/span><span style=\"font-weight: 400;\">oolong, yellow, or white.<\/span><\/p>\n<p>5. <span style=\"font-weight: 400;\">The popular orange pekoe tea does not con<\/span><span style=\"font-weight: 400;\">tain any oranges. Pekoe refers to the highest <\/span><span style=\"font-weight: 400;\">quality black tea, which once was reserved <\/span><span style=\"font-weight: 400;\">for the Dutch Royal Family, known as the <\/span><span style=\"font-weight: 400;\">House of Orange.<\/span><\/p>\n<p>6. <span style=\"font-weight: 400;\">Tea is like wine \u2014 its taste is determined by <\/span><span style=\"font-weight: 400;\">the way it is processed as well as the soil and <\/span><span style=\"font-weight: 400;\">climate in which it grows.<\/span><\/p>\n<p>7. <span style=\"font-weight: 400;\">Teas require different temperatures and <\/span><span style=\"font-weight: 400;\">infusion times. Brew green tea for 2 to 3 <\/span><span style=\"font-weight: 400;\">minutes with water at 175\u00b0F, while black tea <\/span><span style=\"font-weight: 400;\">takes 3 to 5 minutes of brewing in near-boiling <\/span><span style=\"font-weight: 400;\">water.<\/span><\/p>\n<p>8. <span style=\"font-weight: 400;\">Tea has caffeine, but you may not feel the same <\/span><span style=\"font-weight: 400;\">jolt you get from coffee. That\u2019s because tea <\/span><span style=\"font-weight: 400;\">contains tannins and the amino acid <\/span><span style=\"font-weight: 400;\">L-theanine, which both mitigate the effects of <\/span><span style=\"font-weight: 400;\">caffeine.<\/span><\/p>\n<p>9. <span style=\"font-weight: 400;\">That chamomile you drink before bed? It\u2019s not <\/span><span style=\"font-weight: 400;\">really tea. Beverages made from herbs, fruits, <\/span><span style=\"font-weight: 400;\">or spices are technically considered infusions. <\/span><span style=\"font-weight: 400;\">However, it has become common practice to r<\/span><span style=\"font-weight: 400;\">efer to these beverages as herbal teas.<\/span><\/p>\n<p>10. <span style=\"font-weight: 400;\">Prefer your tea iced?
