Finger-licking fun at Family Weekend
The winner of this year’s Family Weekend Lions’ Cook-off Competition shares her award-winning recipe. Plus, photos from the weekend’s events.
Each year for his birthday, freshman Stephen Colonnello’s mother, Patty, bakes him his favorite dessert: her “Delicious Apple Cake.” This year Stephen’s birthday (October 23) fell just a few days after Family Weekend, so Patty decided to make her famous cake a few days early and enter it in the Family Weekend Lions’ Cook-off Competition. Smart move: The judges found her entry the most delectable of those received and awarded her the top prize—a $20 Visa gift card. Lucky for us the recipe isn’t a family secret, and Patty was kind enough to share it.

Delicious Apple Cake
6 large apples (pared & sliced ½ inch)
¼ c. orange juice
3 c. unsifted flour
4 eggs
1 ½ c. sugar
2 ½ tsp. vanilla
3 tsp. baking powder
3 tsps. cinnamon
1 c. Wesson oil
6 Tbsp. sugar
Beat the eggs in a bowl, one at a time. Blend in sugar then flour and baking powder alternately with the oil. Add orange juice and vanilla. Mix well; mixture will be thick. (Mix by hand.) In a separate bowl, mix 3 tsps. cinnamon and 6 Tbsps. sugar. Grease and flour a 10” tube pan. Pour 1/3 of the dough into the pan, cover with 1/3 of the apples and sprinkle with 1/3 of the cinnamon mixture, repeat ending with apples and cinnamon mixture. Bake at 375 degrees for 1 ½ hours. Test before removing from the oven. Let cake cool in pan about 30 minutes before removing. This cake is equally good when made with fresh ripe peaches. Enjoy!
