A tasty way to support educational opportunity

The proceeds from sales of “The College of New Jersey Cookbook: Recipes from the Faculty and Staff” will fund an EOF scholarship.

Move over, Emeril. TCNJ’s human resources office has cooked up a way to help amateur chefs kick it up a notch in the kitchen, while at the same time support TCNJ students in need.

The human resources office recently published The College of New Jersey Cookbook: Recipes from the Faculty and Staff, which features more than 100 recipes for appetizers, drinks, soups, salads, entrées, breads, and desserts. Proceeds from book sales will be donated to TCNJ’s Educational Opportunity Fund (EOF) Program, which assists highly motivated, economically disadvantaged students attend and succeed in college. This first-ever TCNJ cookbook provides everything needed to create a multicultural smorgasbord, said Gregory Pogue, vice president of human resources. “We have a very diverse community on campus, and you’ll see that reflected in the book.” Among the recipes included are President R. Barbara Gitenstein’s challah bread, Professor Orlando Hernandez’s electrifying chili, Associate Vice President/Dean of Students Magda Manetas’ Greek-style lamb with chicken orzo, Professor Judith Kardos’ Hungarian coffee cake, Office Assistant Nadirah Shakir’s She-Crab soup (Charleston style), and two takes on tiramisu: “Ala Rosa,” courtesy of Assistant Dean Rosa Zagari-Marinzoli, and “Ala Simona,” courtesy of Professor Simona Wright.

Pogue said the idea for producing the book was to create “a spirit of pride and build unity among members of the College community.” But it’s a community-building project with a great cause, he pointed out: The goal is to create a $10,000 EOF scholarship through sales of the book.

TCNJ’s EOF Program assists students from backgrounds of “historical poverty” who have lacked access to quality educational preparation. The program maximizes the participants’ chances for success by providing quality academic support, supplemental instruction, and financial assistance. More than 1,500 students have earned their TCNJ degrees through the EOF program since it was created in 1968.
